The surname Bourke is usually spelt as Burke in the Gort area of Co. Galway.
I only found one John Bourke in Griffith's Valuation (1855) . He resided in the townland of Carrowgarriff which is usually called Beagh. It is also in the civil parish of Beagh. His descendants still live there but they spell their surname as "Burke". Their address is Beagh, Gort, Co. Galway.
This John Burke married Catherine Kelly (1825-1895). She was actually a sister of my great-grandmother Anne Kelly who married John Fahy.
Their son Patrick inherited the family farm. You can find him in the 1901 census in Carrowgarriff (Ardimullivan D.E.D.), Co. Galway.
All this information may not lead you to the real John Bourke. It's worth trying anyway.

I just noticed that in the heading to your query that John Bourke's wife was Maria Cooper. I have never seen that surname in the Gort area. Please disregard the information I have sent to you a few minutes ago.
