I assume you know that RC records for Ahascragh parish do not begin until 1840.
I checked the 1824 Tithe listings and the 1855 Griffiths Valuation head of household listings for Ahascragh parish and the only Mannings I see are named either Thomas or Michael. Tithe listing has four Thomas records and one Michael. (There may be some duplicate Thomas records)
The Griffiths have three Thomas and three Michael records and again there could be some duplicates where the same person had two or three properties. https://www.failteromhat.com/griffiths/galway/ahascragh.htm

There are public family trees on Ancestry showing the Manning family. It looks like the family went to India, where Joseph Jr. was born. Dorinda died as follows:

Check British army records online to see if you can find more info about Joseph Sr.
