Here is a website that has some nice maps of Ireland.

The famine years has a nice map showing the percentage of grade four housing that existed in each county .

Underneath the map are some facts on the population decline by county and also by year.

You can see that the census commissioners in 1851 estimated the decline in population in 1847 was 18.5% of the 1841 population.
