I'm trying to find information about my 3rd great grandparents John and Maria Moore. I have two letters written by them from Oldcastle and one that is from Kilgueary, which I can't find. I don't have any exact dates, but their children were born around 1850. Both of their daughters were married in the Anglican Church in England, so I don't know whether or not that means that the Moores were not Catholic. If anyone could point me in the right direction I would be most appreciative.

Have you tried looking for information on John and Maria in church records? It is possible that they were not Catholic if both daughters married in the Anglican church, however it may also be that their husbands followed this church.
There are a number of places you can research church records:
For Anglican records check http://ireland.anglican.org/about/42 and http://www.nationalarchives.ie/. The Anglican Record Project is has created an index to their records: http://ireland.anglican.org/cmsfiles/pdf/AboutUs/library/AngRecord/bunclodyunionindex.pdf
Most Catholic records are held locally. One website which may help you is the irishtimes. Here they give an overview of what records are available in specific parishes. For Oldcastle parish follow this link:
Also check www.irishgenealogy.ie/index.html Both Catholic and Church of Ireland records are currently being uploaded here free of charge. However, as it is an ongoing project not all records are available yet.
You could also do a search for them in the two land records pertaining to Ireland in the 19th century. The earlier records are the Tithe Applotment Books (1823-1838) and they can be found here:

The second is Griffith's Valuation (1848-1864) found here:

Did they have any other children apart from the two daughters that moved to England? If they did, perhaps you could do a search for them in the 1901/1911 census records? You can do this here:

With regards to Kilgueary, I can't find that either. Here is a link to all the civil parishes in Meath, none are that similar or sound like Kilgueary: http://www.irishtimes.com/ancestor/fuses/civilparish/index.cfm?fuseaction=GetMap&CityCounty=Meath
The closest placename I have found is Kilkeary in Co. Tipperay. Is it possible that they would have been in Tipperary? Here is a link to information on the parish of Kilkeary:
