Looking for information on Patrick Kane and Anna McManus. They immigrated to Quebec, Canada about 1841 with their 4 children; Catherine (1833), Francis (1834), Peter (1837), and Patrick (1838). There is a connection to the names McHugh and McGowan (Fermanagh) and possibly links to Scrabby. Peter's headstone says "Cavan". Any information would be greatly appreciated.

Have you tried looking for the family in the land records pertaining to Ireland in the 19th century. Although these do not offer any genealogical information they can sometimes be used to tie a person to a specific place. There are two:
The Tithe Applotment Books (1823-1838) found at http://titheapplotmentbooks.nationalarchives.ie/search/tab/home.jsp
and Griffith?s Valuation (1848-1864) found at http://www.askaboutireland.ie/griffith-valuation/
Once you have a definite parish you can then look for information in Church records. Most Catholic records are held locally. One website which may be helpful is the Irish Times where they give a list of what records are available in specific parishes. To check Scrabby parish follow this link:
For Church of Ireland records check http://ireland.anglican.org/about/42 and http://www.nationalarchives.ie/. The Anglican Record Project is has created an index to their records: http://ireland.anglican.org/cmsfiles/pdf/AboutUs/library/AngRecord/bunclodyunionindex.pdf
Have you looked into their emigration much? Generally more information was given at the port of arrival rather than that of departure so this may be a place to find more information. For immigration records in Canada check the National Library and Archives at the following link:

You could also try doing a search at https://familysearch.org/ This is a huge database of genealogical records compiled by the Church of the Latter Day Saints.
