I am searching for records on my Great Great Grandfather. He was born in Dublin about 1841. He married Ellen Oaks who was born in Dublin about 1844. They immigrated to Canada and resided in Brockville, Ontario Canada. They had one son John Henry Jacobs Born 1857 in Brockville, Ontario, Canada

Do you know if John was from Dublin City itself, or somewhere in the county of Dublin? It may be difficult to find information on him without knowing a more specific place of origin as most Irish record sources- church records, land records, census records- are based on specific locations.
Do you have any documentation pertaining to the family that mentions any place names in Dublin at all? This can include wills, marriage/death records,census records, letters, diary entries etc.
There are some places where you can search online, however it may be difficult to discern whether the results are relevant to your family or not without more information:
www.familysearch.org has a huge database of genealogical records including some church records for Ireland.
www.rootsireland.ie have a large collection of Irish Church records, however you have to pay to use this site.
http://churchrecords.irishgenealogy.ie/churchrecords/ have begun a project to upload Irish church records to their site free of charge. Only some areas have been covered so far. this includes Dublin City. Hopefully if John was born in the city, or married there you should be able to find record of it here.
Have you tried looking into the family?s emigration? Sometimes more infomation can be found at the port of arrival rather than that of departure. You may be lucky and find a place name here. For information on Canadian immigration records check http://www.collectionscanada.gc.ca/index-e.html
Do you know his father?s name? If you do you may be able to find a record of him in Griffith?s Valuation. This is a property valuation survey that was carried out 1848-64. I did a search for Jacob in Dublin here is what came back:
There was no Jacob/Jacobs recorded in Dublin city.
