My great-grandmother, Mary Jane Willis, was born in Co Tyrone in about 1831. Her father was William Willis. By the time of her marriage to John McKitterick in 1855 the family were living in Loughgall village, Levelleglish parish. She died in Loughgall in 1910. I would llike to know more about her family and where they lived in Co Tyrone.

No Willis records in the Tithes Applotment listings for Co. Tyrone
I checked www.rootsireland.ie but could not locate a baptismal record for a Mary Jane Willis born in Co. Tyrone in 1831. The 1859 Griffiths Valuation head of household listing listed 11 Willis records ( I know your family had moved). They seemed to be clustered in one of three parishes.

Levelleglish is a townland in the parish of Loughall probably not far from the village.

You may have the 1901 census record for May Jane but just in case, here it is.

Mary Jane was Church of Ireland in the 1901 census. Assuming that was also the denomination in which she was brought up, then I?d be inclined to search the COI records of the parishes that Roger has identified, for her baptism. Not all Church of Ireland records are on the Rootsireland site, and you should therefore look at the copies in PRONI, Belfast, to check comprehensively.
You can see what records survive for each parish on the PRONI website. They are not on-line and a personal visit is required to access them:
