Dear Bob
Welcome to Ireland Reaching Out!
You could check irishgenealogy.ie which is a free site listing the details of Dublin church records. I have contacted the archivist in Trinity Library to see how extensive their employees? records are and how far back these go. I will update you when I hear anything back from her.
As you say, the family are mentioned on the 1901 Census:
http://www.census.nationalarchives.ie/pages/1901/Dublin/Rathmines___Rat…
There are 7 marriage records for a Maria Greeg on rootsireland.ie but I can?t say which, if any would be the Maria listed on the Census. I assume that Greeg was John?s mother?s pre-marriage name? He is listed on the Census as a son of the Head of Household. If this is the case, the Census has recorded Maria?s age incorrectly. He is listed aged 51 and she, his mother aged 49.
Best wishes

Dear Bob
The archivist at Trinity College has replied to my message:
"We have no records of a John Murphy working around 1900, but that isn?t to say he didn?t. I?ve been through the Bursar?s vouchers and they make mention of a John Murphy working as a gardener in 1840 but nothing more. Colleagues here say that the Bursar?s vouchers aren?t always a complete record anyway, as the Bursar could have paid the Groom, and then the records disappear as the groom would have handled stableman wages from there".
Best wishes
