Welcome to Ireland Reaching Out!
Only two RC parishes in Co. Roscommon have records that date back to pre-1800 but neither parish has records back to 1770. So we will be unable to find any possible baptismal records. McDermott is also a very common surname in Co. Roscommon.
You could include Edward's story on our XO Chronicles site. https://www.irelandxo.com/ireland-xo/history-and-genealogy/ancestor-dat…
You may also want to consider autosomal DNA testing.

The problem with McDermott in Co Roscommon ... needle in a haystack!
Your only luck might be if your Edward made it big in America, in which case he probably sent family announcements home to the local press.
Bear in mind, at that time his native name was Éamonn, Edward being an Anglicisation.
If we assume "Edward" was also the name of his father, then the Elphin Census of 1749 would narrow your search down to the following parishes:
Carrownagashel (par. Ardcarn)
Rathdiveen (par. Kilbryan) farmer
Tuamagranel (par.Kilgefin): blacksmith
Breedoge (Kilnamanagh Boyle) (innkeeper)
Roscommon town (par. Rscommon)
Strokestown (par. Bumlin)
If any of those match to autosomal DNA results, then you may have something to go on.
