I am looking for more information on my 3great parents.
James Cahill born ? don't know where in Ireland.
Katharine Morrissey born abt 1835.
They had one son Michael Cahill abt 1854 born in Ireland and a daughter (My 2x great grandmother)Josephine (Josie) Cahill 1861, but I think she might of been born in England.
I believe they immigrated to the United States between 1861 and 1864.
There may be other children.
I don't think James Cahill came over to the United states, I think it was Katherine and their children. I know I don't have a lot of information but maybe it will be enough.

I searched the subscription site Roots Ireland and located a January 28 1847 marriage between Jacobus (James) Cahill and Catherine Morrissey. The parish was Ballylooby in Co. Tipperary. However, I did not find any baptismal records for children of that couple.
Roots Ireland does not have all available baptismal records for Co. Tipperary. I will check another site later and let you know.

Possibly they were baptized in a parish that does not have records back to 1854. RC church marriage records do not show parents names. Starting in 1864, RC marriages were required to be civilly registered and those records showed the father's names of the bride and groom.

Is there any way of finding out the parents of either? Or maybe a death record if James?

Forget the last question about Josephine's father, he probably died in England.

The records for Ballylooby start in 1828 https://registers.nli.ie/parishes/1094 We don't know if James and Catherine were both from that parish but likely at least Catherine since the marriage was normally held in the bride's parish. I searched FindMyPast but did not find a record for Catherine in Ballylooby. James Cahill was a very common name so no way to find him without his parents names.

I have an EDMUND MORRISSEY marrying Margaret CAHILL, 1853 in Ballymountain, County Kilkenny. I am pretty sure these CAHILLS show up in Griffith's Evaluation there in the Ballymountain, Sliveroe, Kilaspy area.
