HI Tom,
I went to www.rootsireland.ie and searched for isaac sinnamon. It is a really rare name and there were only two church records . These were marriage records for Isaac Sinnamon Co. Armagh 1859 and the other was Co. Armagh 1896. These have to be relatives of some kind .

The 1864 Griffiths Valuation head of household data for Armagh showed that all the Sinnamon names were in the civil parish of Drumcree. I assume one of the names below is the father of Isaac.

Do you have Isaac's death record? If he died post-1900 in Pennsylvania, the death record should show parents names. If you get his father's name, you can tie back to the Griffiths data.

I have Sinnamon in my family as well. There were a few in County Down, Killcoo parish area, though many more were in Drumcree, Armagh as Roger stated above.
Ancestry.com has Isaac Sinnamon's death certificate in Philadelphia, showing he died in 1913. It lists Isaac's father's name as James, with no information on the mother's name.
James was not a common first name in this particular family.
Ulster Historical Foundation (UHF) has a Birth/Baptism record for a James Cinnamond (the spellings were pretty interchangeable) baptized/registered 2 July 1814 in Church of Ireland, Kilcoo parish, County Down. The father of James is shown as George, whose wife, mother of James, is Mary Gray. The birth date of 1814 suggests that this James could be the father of Isaac who was born in 1851 and died in Philadelphia.
UHF also has an index of Printed Irish Will Calendars 1878-1900 with an entry for James Cinnamond of County Down who appears to have died 13 -1-1881 with the will processed in 1887.
