I'm in search of any information about Anthony McDonnell (B. abt 1815) or his wife, Margaret Jordan (B. abt 1811). They both emigrated to Quebec Canada sometime before June 1841, where their first child was baptized in a RC church.

More than likely Anthony and Margaret came from Co. Mayo. I checked the subscription site Roots Ireland and did not locate a church marriage record. Likely the church where the marriage occurred no longer has records back to that time period.
Have you considered a DNA test? You might get matches on your McDonnell/Jordan line.

In the Tithe Applotment Books, three Anthony McDonnells were listed as heads of household.
