Sue:
I searched the subscription site Roots Ireland and did not find any Carey baptismal records in Co. Limerick with father James and mother with a maiden name of Connor/O'Connor.
Castllegarde is a townland in the civil parish of Doon which is near the border with Co. Tipperary. Doon RC parish has baptismal records starting in March 1824. https://registers.nli.ie/parishes/0260 Possibly Mary was born in 1823 or earlier and for that reason a record is not available.
The 1850 Griffiths Valuation head of household listing shows a James Carey in Castlegarde so he was alive at that point.

Ellen Carey died in 1883. See fourth record
James Carey died in 1881. See second record
One Carey family in the 1901 census in Castlegarde.
