Left Queenstown on the Carrick Castle for Bluff, New Zealand 27th April,1874. They had children Jeremiah, John, Julia and Denis. Any information as to where they came from in Cork County would be appreciated.

I located one record of interest which may or may not be for your family.

On the subscription site Find My Past, I located an April 9, 1874 baptismal record (born April 5th) at St. Mary's parish in Cork city for a Honora Ryan. Father was John Ryan and mother was Bridget Desmond. They lived on Fair Lane. Possibly they left for New Zealand right after this birth.

Here is the link to the parish register entry   https://registers.nli.ie//registers/vtls000633161#page/126/mode/1up

I did not find a civil birth record nor records for the other children.

Problem--Your note does not mention Honora.

I thought I was finished but I went back to look for a marriage record and found a May 13 1859 marriage record in St. Mary's parish Cork city for a John Ryan and Bridget Desmond.

Still not sure if this is the correct family but here is the parish register for St. Mary's  https://registers.nli.ie/parishes/0041  maybe you can scan the register and see if you can find baptismal reocrds between 1859-1873.
