Hello Ann Maree, Willliam married Margaret in 1877 and I found these details, both fathers were deceased.

They appear to have been slow to register the children in the civil register even though there was a fine for late registration, I see the following children

William 18th Jan 1894; Anne 2nd Jun 1890

Honor or Honora or Norah; 2nd November 1889 (there is a note on this record that says name Kate married in 1920 to Michale Kealy

Thomas 9th July 1887

Mary 20th May 1885

Bridget 2nd February 1883

Edmund 25th Feb 1878

Edward 11th May 1881 (Edmund may ahve died)

All the baptism entries and civil records post 1864 should be available free on these sites, https://www.irishgenealogy.ie/en/ click on civil as the church records are not there for Kilkenny, you can search the parish registers by date only and then read. https://registers.nli.ie/ 

The Stapleton name would be common enough in the area but Cuggy is very unusual.
