Trying to connect with my Irish roots. My grandfather emmigrated to Canada - leaving all of his relatives behind. He arrived in Canada and went to work at a farm in Conquest, Saskatchewan, Canada to payoff his passage and then moved to Regina, Saskatchewan. My mother, Mary Doreen Andrews (nee Ellis) is his only child - who unfortunately has dementia and cannot recall any history. My mother did visit Samuel Ellis' family in the mid 1930's. I would appreciate any information or assistance in trying to find my Irish ancestors.

Samuel Ellis is a common enough name in Ireland, especially around Co Antrim. There?s 15 of them in the 1911 census.
You need to try and find a bit more information from Canadian sources to be sure of finding the right one in Ireland. Firstly, do you have a death certificate which should give his age, parents (and perhaps a place of birth). Or perhaps his marriage certificate might contain some of that information.
What denomination was he, as that will help narrow the field; (Those in the 1911 census are a mix of Presbyterians, Church of Ireland (ie Anglican), RC and 1 atheist.
Have you tried finding his emigration records as these too usually give clues about age and family in Ireland?
Having said that, I see you have posted this query under Aghalee. Here's 1 Samuel Ellis there in 1911, but you need to cross check with other sources to make sure this is the right family:
