Hi Lucie
Welcome to Ireland Reaching Out!
The expert session was conducted on the Ireland Family History FB page but you are welcome here nonetheless!
Firstly there won't be a birth record for Eliza as she was born prior to 1864 when civil registration was introduced in Ireland. I couldn't locate a marriage record for Jane and William and the only baptism I could find for children born to this couple was for a John Minnitt who was baptised on 16 December 1827. This record gives his birth date as 14 September 1827. The family lived on Lower Arran Street in Dublin and he was baptised in St. Mary's Church of Ireland parish. Sponsors to the baptism were not named. You can see the digitised original here:

Do you think Elizabeth could have married in the US?
Best wishes

Hi Lu
I received your reply through the email rather than here - in answer to your question:
Is Minnett an Irish surname??? It sounds more French than Irish?
Yes it does seem to be of French origin but there were some of the family name in Ireland in the 19th Century:

This blog introduces the notion of how the French sounding name made it into an Irish family history:

Thank you again Clare. The Minnett family did stay in Quebec for a short time. Is St Mary's Church Catholic??? I know Eliza Agnes married in Quebec then she and her family arrive in NY a few years later. I am wondering if she was a widow?? Catholics were are permitted to divorce. I have further investigations.
Bless you for helping me.

Hi Lu, The above baptism was in the Church of Ireland parish of St. Mary's, Dublin. You could check out to see if you can find a death record for a husband
Best wishes

Oh Clare you are so sweet and helpful. Eliza was married in Montreal, Canada not Quebec. Been checking off and on to see if a death record is might be available or possibly a divorce record. I am sending a copy of her marriage record.
You are a gem,
Lu
