Eubank/Ubank

I am trying to looking for information on any Eubank/Ubank families in Ireland.  A friend whom I am helping with their genealogy's great grandmother was Mary Eubank.  She gave birth to an illegitimate son-(my friend's grandfather) John Edward Eubank on July 2, 1891 in St. Paul, Minnesota.  All that is recorded of the mother Mary Eubank is her name, and that she was from Ireland.  Have been unable to locate any records, immigration, birth, death or marriage on her.  We think she was born around 1867-1871 in Ireland. Any help would be appreciated.  Many Eubank/Ubank are listed in the Dublin, Wicklow and Cork County area of Ireland in the 1800s.  Thanks.
