We have always assumed Caheragh Parish, Cork but some family lore also suggests stonemasons fro Mallow, Doneraille area. All we have from Ireland is a postcard of Ballylickey bridge and a photo of a couple we assume is them.

My name is Anne Marie and I am the Irelandxo parish liaison for Mallow.
I had a look for records in the Mallow and surrounding area but could not match Peter J Regan with Cath Morrison or Morris
when looking for the baptism of Catherine in Cork on the subscription site www.rootsireland.ie I see 11 matches and when I look for Peter Regan there are no matches on this site what mainly covers north and a part of south Cork not Cork city.
I also checked the free site www.irishgenealogy.ie for Peters baptism and a search between 1825 and 1840 gave me 55 matches.
I was not able to find a marriage between Peter and Catherine, is it possible they got married after emigration?

From family info, they had three children in County Cork then the last one in Canada.
