Two of my emmigrant great x3 grandparents were Michael Hoban and Catherine Noonan from Waterford to Chicago. My emmigrant great grandfather was Michael Barry, also from Waterford to NYC.

Do you have any other information regarding Michae and Catherine and your great grandfather? Any dates that you could provide would really help determine what records to look at. Dates such as birth/marriage/emigration.
You could try looking at Church records to find information. You can see what church records are available for the parish of Trinity -Without/Ballybrickan on the Irishtimes website here:
For Church of Ireland Records use the following sites:

Perhaps you could check for some mention of the families in the land records pertaining to Ireland in the 19th century. There are two:
The Tithe Applotment Books (1823 to 1838) http://titheapplotmentbooks.nationalarchives.ie/search/tab/home.jsp
and
The Griffiths Valuation (1848 to 1864) at http://www.askaboutireland.ie/griffith-valuation/
You could also search the 1901 and 1911 census records if the time period is relevant, at http://www.census.nationalarchives.ie/search/
Do you know much about their emigration? Generally more information was given at the prt of arrival rather than departure. If you knew which city they arrived in it may help find information. A good place to start looking at immigration information is the US National Archives website at:
