Unfortunatley, the reality of finding documentation pertaining to births/baptisms/marriages/deaths in Ireland prior to 1800, is that they simply may not exist. However, as Samuel and Agnes lived in Dublin you may be lucky! The Church of Ireland was the official church of the country, so the bulk of information that does survive from earlier periods is often from these registers. The following websites may help you:

Most Catholic records are held locally. One website which may help you is the irishtimes website. Here they give an overview of what records are available for specific parishes. You may be able to find, birth, baptism, marraige records etc pertaining to the family. To see what is available for St. Catherine's follow this link:
With regards to their emigration, recording of passanger lists did not begin in the US until 1820. However, there are two exceptions to this and luckily Philadelphi is one of them! Here is a link to a webpage on the US National Archives websites which tells you what they have:
