I have the baptism record of my GGGrand Aunt Margaret "Maggie" Anne SHANAHAN, daughter of Thomas SHANAHAN and Bridget LUBY. She was baptised in St. Patrick's Roman Catholic Church in 1841 by the then curate Rev George BUTLER. Her godparents were listed as Thomas BURCH and Catherine BURCH.
Anyone have any BURCH family from the city of Limerick? Is BURCH a variant spelling of Burke / Bourke?

It could be a variant of Burke. However there were also Birch/Burch families recorded in 19th Century Ireland:
