Here is the parish register for Newcastle West http://registers.nli.ie/parishes/0891 in case you have not reviewed the register.
I checked Roots Ireland and the closest record I could locate was in 1859. See transcription below. I did not check the register but maybe the surname for the mother and father were reversed? I would review the register.

Hi roger, thanks so much for your help. This little clue may hold all the answers as to her mysterious life. Anne Keeffe could be her mother and John pierce her dad. This Mary was illegitimate My grandmother was married in 1878 in Iowa under the name Katy okeefe. I find no ship records, and no record of her in the US until her marriage. She has been quite the mystery. Maybe this is why. Thanks again diana
