Mary Connor is my great-grandmother who was baptised, I believe, at the Church of the Assumption in Slieverue, Kilkenny. Possibly born about 1850 -1855 and the family would have emigrated shortly after her birth. Brother is Nicholas born January 1853 and Catharine (also Kate apparently) born 1848 possibly. Two other children were born in Canada.
What county is Slieverue/Church of the Assumption in? I think the diocese is the Ossory diocese - correct?
I'm wondering if birth dates are available, the marriage of Catharine and John and who their parents were.

The RC parish of Slieverue is located in the southeast corner of Co. Kilkenny and It appears that a small part of the parish is in Co. Waterford. Here is the parish register up to 1880 https://registers.nli.ie/parishes/1031 The Diocese is Ossory.
I searched on the subscription site Roots Ireland and found the marriage record for John Conors and Catherine Shea in Mooncoin RC parish Mooncoin is two parishes to the west from Slieverue. The date of the marriage was February 9 1844.
I located three baptismal records for their children in Slieverue. All with parents John Connor or Connors and Kate Shea. Dates are baptismal dates but they would have been born a few days earlier. They lived in a place called Glasshouse which is a local place name.

I googled 'Glasshouse' and came up with nothing in way of a place. Would you be able to give me a rough idea where it is?
Would the baptismal church be Church of the Assumption in Slieverue?

Yes, Church of the Assumption in Slieverue.
I looked in the Mooncoin records (sine the marriage was in that parish) and the only Catherine Shea baptism that makes sense with an 1844 marriage was a November 20 1817 record in Mooncoin with father Patrick Shea and mother Honor Cummins
The only John Connor record in Slieverue that fits 1844 is probably unlikely unless John was 38 when he married.

Canadian census record of 1851 lists John Connors as being 38 years old and Catherine Connors being 31 years old. Daughter Catherine was 8, Nicholas was 5 and Mary is listed as 3 years old.
1871 census has John dead, Catherine, his wife, as being 53, Catherine, their daughter, as being 24 and Nicholas as 22 and Mary as 20.
There is no record of any of them in the 1861 census that I've been able to find.
Census records are often not accurate about age. In the 1851 census, John would have been born about 1813 and Catharine about 1820 (which might fit what you found); in 1871, Catherine would have been born in 1818 - again quite close to what you found. I'm guessing that in 1851, they would be fairly new to the country since Mary was born in Ireland in March of 1850 ( though is listed as 3 years old in the 1851 census).
Those dates make some sense, though. One of their children is Patrick (born in Canada) and there is Nicholas as well and the other three children are girls - Catherine, Mary and Honora/Nora
