If she was from County Clare, Ireland, it is highly likely her father's family lived around Sixmilebridge, Clonmoney, Rossmanagher and Cratloe (townlands close to each other in south Clare), also Limerick city. These were the Frost strongholds in Clare in from 1700's to mid 1800. There was a George Frost and Mary Halloran who had children in early 1800's - baptisms in Cratloe. One was Catherine baptised 2 May 1817. If Catherine's father was George, he may have come through this line. There is a Kate (often used in place of Catherine) Frost baptised 27 December 1848, parents Patrick Frost and Margaret Quinlivan - in the Sixmilebridge baptisms. Do you have any sibling names?

The family story of Catherine Mitchell (Frost) is that she came from Ireland, to US about 1876, married Frank Mitchell in Boston, moved to Washington State to homestead, raised 6 children.
I have been unable to find any parish baptism records for Catherine, and no immigration records on Passenger lists.
Some US census records list her as being from Ireland, some say England. The family story of her is that she was from Ireland
